FRIED RABBIT WITH WINE

Rabbit is one of my favorite meats which can be cooked in many ways. Rabbit meat is white and lean, with less fat and has a great advantage over red meat. White meat is high in protein and all the essential amino acids that need to be included in our diet. Lean white meat is a culinary delight as it can be roasted, fried, stewed, with red sauce, boiled, with egg lemon, stuffed and fried. A favorite of the Cretans is to combine legumes and vegetables with meat.

Beans were my grandfather’s favorite, either with red sauce or with meat. "This is yes!" he always said. The garden was full of colored beans that to my eyes, as a child, looked like real beads to play with. Whatever grandfather did was always with love and care. He made sure to store everything well, knew the beans, carefully peeled them, and wrapped them up in small cloth bags.
In the middle of the house there was a storage room, dark and cool, filled with jars of beans, dried figs, raisins, walnuts, almonds, olive oil, corn, olives, bunches of oregano, sage and tomato sauces to name but a few. Grandpa gathered these like an ant. It was a magic room for me due to the smells, the colors and the warmth of this space made me want to constantly explore, opening the jars as if discovering the world.
When grandpa died, we brought grandma to live with us. The house where they had lived in the upper neighborhood of the village was deserted. The gate, which had always been open to anyone who came, was closed with a chain.
