Rabbit is the perfect meat for modern requirements. Rich in protein and vitamins, low in calories and cholesterol. Today we will combine it with exquisite noodles that give extra flavor and have the warmth of the village.

Ingredients:
1 kg rabbit cut into small portions
100ml olive oil
1 large dried onion
2 cloves garlic
200ml red wine
1 Florin peppers
2 large ripe tomatoes (grated)
1 tbsp tomato puree
1 tbsp grape syrup
1 cinnamon stick
2 bay leaves
3-4 grains of spice
Salt & pepper
500g long noodles
300g dried ricotta cheese

Method:
Put the rabbit pieces in a bowl of red wine (enough to cover), half a shot of vinegar and bay leaves to marinate for 1-2 hours and then strain.
In a saucepan, warm the olive oil, add the rabbit pieces and sauté on high heat on both sides until light brown. Add the onion and chopped garlic and stir. Finish off with wine until it evaporates.
Whizz the Florin pepper in the multi and pour on top of the food, add the grated tomatoes and the tomato puree dissolved in a mug of warm water.
Add the spices and tomato to the saucepan lower the heat and bake for about an hour.
Add 3 cups hot water and boil, pour in the noodles and cook for as long as the package says.
Serve with enough grated cheese.
Ideally eat warm.
