Is it rainy and cold outside? If you’re missing the fireplace and the radiators, chatting on the sofa with blankets and watching old movies, why not enjoy a dish of hot chicken soup? Can you think of anything better?

Ingredients:
1-1.5k. organic chicken
2.5l of water
20ml olive oil
200g of glazed rice or Carolina
2 eggs
Juice of two lemons
Lemon zest
Salt & pepper
Spoonful of butter (optional for sautéing the chicken)

Method:
Put the chicken cut into portions, the water, olive oil and salt in a saucepan.
Allow to boil and whisk whenever needed.
When the chicken is ready, remove the pan from the heat. Remove the chicken to a platter and strain the broth into a clean saucepan.
Salt, if the broth needs it again, and bring to a boil. Add the rice and stir. Leave to cook.
In a bowl whisk the egg whites until they are fluffy and then beat the yolks and put them together. Slowly pour the lemon juice and then add 3-4 tablespoons of the broth slowly so that the egg does not scramble and the egg mix gets the same temperature as the food. Pour the egg mix slowly into the food and stir well to combine.
Add fresh pepper and half a lemon zest.
If you want the chicken to be tastier, sauté with a spoonful of butter. The dish becomes heavier, but the old housewives used to do it.
