Rabbit is one of my favorite meats which can be cooked in many ways. Rabbit meat is white and lean, with less fat and has a great advantage over red meat. White meat is high in protein and all the essential amino acids that need to be included in our diet. Lean white meat is a culinary delight as it can be roasted, fried, stewed, with red sauce, boiled, with egg lemon, stuffed and fried. In our villages many households have the ability to continue to raise animals such as chickens, goats, sheep or pigs for the purpose of producing quality meat, no matter the cost. The housewife takes care to feed them with quality, rich foods. They are usually housed in coops or stables near the house. Breeders talk to their animals, stroking them to acquire a friendly relationship, and they praise them to ensure that they don’t succumb to the  “Evil Eye” or have something wrong with them. At the entrance of the coop they make sure to put amulets to dispel the bad energy. They only want to fill their freezers with their own production and they feel satisfied that this is their own creation and boast about it.Once again, due to the responsibilities of modern life, it’s difficult to breed our own animals so you can trust your local butcher with his choice, because we know they takes care of thier customers with the best products.We have many ways to enjoy rabbit meat. Today I chose to make the rabbit that my dad sent me to fry in the pan.

Ingredients:
1-1.5 kg rabbit
300ml red wine
100ml olive oil
Salt & pepper

For marinade:
500ml red wine
4-5 laurel leaves
Spices

Method:
Put the rabbit in a bowl, cut into small portions. Pour in the wine, add bay leaves and seeds of the spice. Cover with cling film and leave for at least one hour.
In a saucepan, pour in the olive oil and allow to warm. Add the rabbit portions, after straining them from the marinade. Fry well on both sides, quench with wine and salt. Reduce the temperature to half, cover with lid and bake for 1.5 - 2 hours until the rabbit softens.
If all the liquids have been absorbed during baking, we can add some more wine.
Remove from the heat, add the fresh pepper and allow the food to combine. An ideal accompaniment is French fries.

Σε μια κατσαρόλα ρίχνουμε το ελαιόλαδο, αφήνουμε να ζεσταθεί και προσθέτουμε τις μερίδες το κουνέλι αφού πρώτα έχουμε σουρώσει από τη μαρινάδα. Τσιγαρίζουμε καλά και από τις δυο πλευρές, σβήνουμε με το κρασί και αλατίζουμε. Χαμηλώνουμε τη θερμοκρασία στο μισό, σκεπάζουμε με το καπάκι και αφήνουμε να ψηθεί για 1,5 – 2 ώρες μέχρι να μαλακώσει το κουνέλι μας.

Αν κατά τη διάρκεια του ψησίματος έχει πιει όλα τα υγρά μπορούμε να προσθέσουμε λίγο ακόμα κρασί.

Κατεβάζουμε από τη φωτιά ρίχνουμε φρέσκο πιπέρι και αφήνουμε το φαγητό να μελώσει. Συνδυάζετε ιδανικά με πατάτες τηγανιτές.
