FOOD PRESERVATION

Food preservation in Crete dates back to ancient times. During the Minoan era people used to preserve food such as wheat, barley, olives, olive oil, in well sealed vessels in cool places or in pits dug in the ground covered with slabs. Even today there is been a need to preserve food for a long time.
In modern times, different preservation methods are utilized, such as the drying method for vegetables, fruit and meat. A well known and widespread method was to smoke meat or fish.
