It is imagination that ultimately counts.I met this simplicity four years ago when I was invited to a shepherd’s stone shelter in Anogeia (my dear friend did not want me to mention his name). In nature I came to know the simplicity of a mountain climber, of people who learned to live with goats and sheep, with eagles, little kittens and vultures, to touch the earth and touch the clouds.In this dreamy environment of the shelter, the only material being stone, in a simple kitchen we made lamb with red sauce with just three ingredients: lamb meat, tomato and oil. When I tasted it, I was enthusiastic. Then the shepherd turned around and said to me: "Just cook. If you have good materials, you don't need anything else. It’s like a woman. If she's a pretty woman and she puts on make, it only spoils her.”Ingredients:
1.5 kg of lamb cut into small portions
4 large ripe tomatoes (peeled)
200ml olive oil
SaltMethod:
Take the lamb, cut it into small portions and wash well. Peel the tomatoes.
In a saucepan put the meat, cut the tomatoes into four and pour in the olive oil and salt.
Bake on high heat until cooked, then lower to half and bake for about two hours.
