One of my favorite salads of this season is lettuce with artichokes and radish. I love to combine with fish especially.

 

It’s a habit I’ve had for years from my dad, who loves it too. If I do not visit my village on a Saturday, he will send me produce by bus, or with a relative or villager who’s coming to the city. He'll call me on Friday and the first thing he asks me:
- How are you? Are the kids ok? Do you have olive oil? (And so it continues) You don't have a big barrel for your oil; you just take it bottle by bottle. (My dad wants me to have a 50l plastic barrel of oil so he can be sure I always have some. Bless!)
- But I have two young kids to take care of, dad. I'll tell you if I need any oil. (For my father, having less than 50l of oil at home is an insult to him.)
- Do you have potatoes? Eggs? Rusk bread? I’ll slaughter a hen for you to make it with pilaf for the kids. I’ll send it with the neighbor’s daughter who’s coming to Heraklion.
- Don't send loads of stuff that I don’t know what to do with, dad!
- It doesn't matter. Give anything you don’t want to your co-workers, your relatives or your friends, to fulfill your obligations.
My dad plants so many vegetables every year to feed my mum and him. My mum yells and complains all the time but she still listens to him. It is a great pleasure for him to take care of his family and to be responsible to make sure that no one is left wanting and also to give to friends and neighbors, who appreciate something home grown.
And this Saturday, of course, came the day I was expecting. Eggs, dry rusk bread, homemade cheese, a rabbit, a hen, the first fresh beans, zucchini, artichokes, lettuce and three radishes. When I opened the bags, my eyes fell on the radish. I really like this vegetable as it’s the best appetizer to accompany raki. I quickly peeled one up and enjoyed it with salt and lemon. Sweet, cool, crunchy. My grandmother taught me to eat all kinds of plants from the radish family as a child.
Since I had a fried fish that day it was a great idea to make our favorite lettuce with artichokes and of course add radish. My kids enjoy it so I recommend it to you and I enjoy it.

Ingredients:
1 lettuce
2 fresh onions
1/2 a bunch of dill
2 artichokes
1 radish
Olive oil (about 4 tablespoons)
Vinegar (about 2 tablespoons)
Salt

Method:
Clean the artichokes cut the stalks and remove the leaves. Cut in the middle and with a spoon or knife, remove the hairs. Fill a bowl with water and the juice from two lemons. Place the artichokes in the bowl so they don't go brown until you have cleaned the next ones.
Wash the vegetables very well and let them strain. Chop them into a large bowl. Add the sliced ​​artichokes. Peel the radish and cut it into thin slices as well.
Drizzle with olive oil and vinegar, salt and stir in our salad. It's ready to serve.
