At the New Year's Eve party, we all want to have all the best, to bring in the New Year with plenty and to be like this all year round in our home. Even the salads that accompany the meat are rich and special.

Today I have a special salad with apricot and pumpkin seed candy bars that will excite your guests.



Smoked pork (apaki)
White cabbage
Stamnagathi (endive / frisee)
Yellow pepper
1 pomegranate
Dried figs
Dried apricots
Gruyere flakes
1 pumpkin seed candy

For the sauce:
6 tablespoons olive oil
2 tablespoons vinegar
1 tbsp grape syrup
Zest of one orange

Wash the vegetables, let them dry, and cut them into a bowl.
Clean the pomegranate (see here how to clean the pomegranate easily) and pour into the salad.
Chop the figs and apricots or whatever other dried fruit you want.
Slice the apples into thin slices, if you wish you can bake them in a small frying pan.
In a bowl whisk the ingredients for the sauce, (the amount for the sauce is for a 6 person salad, about 100-150 g salad per person) pour in the vegetables and stir.
Place the salad in a salad bowl or platter and add gruyere flakes.
