I went to the village for Easter and found the opportunity to return to the neighborhoods. To describe to you the beautiful pictures of courtyards and flowers, whitewashed walls, clean streets and picturesque gardens, I could talk for hours.
But I can tell you about my aunt Despina's garden, with the blooming oranges and lemons, the cool beans and the artichokes around the wall. "Cut everything," my aunt tells me. I say, “I can’t cut them all! I’ll only cut something for meze to go with the raki.” To tell the truth, I didn't miss such an opportunity, but I do miss my aunt, who knows how much I love her, and every time I go to the village I visit her first. There were so many vegetables left over that I brought them back with me to Heraklion.
When I was leaving my mother, in addition to my Easter sweets, she had also put some free range eggs and chives and dill from my father's garden in a bag. It's like that in the village. “Take this and take the other, for the children. They are fresh and from our garden!" My mother repeatedly said to me.
With these ingredients I got the chance and made a fluffy omelet with artichokes, chives and dill. One hundred percent organic. With eggs from the village coop, with onions from my father's garden and dill from a corner of the garden, only in paradise can you find such ingredients and make such a meal that the kids go crazy about.

4 tablespoons olive oil
2 fresh onions
1 tablespoon of dill
100g slice or sour cream (optional)
Clean the artichokes, cut the stalks and remove the leaves. Cut in the middle and with a spoon remove the hairs. Fill a bowl of water and juice from two lemons. Put the artichokes in the lemon so they don't go brown until you have cleaned the next ones.
In enough salted water boil the artichokes for a while but not to soften completely. Strain and cut the artichokes into thinnish slices.
In a pan heat the olive oil, add the artichokes and sauté until they are brown. Add the onion and dill and continue to sauté.
In a bowl beat the eggs with a little salt and pepper and add the artichokes. Fry in a pan with a little oil and leave to set. If you want to add feta cheese, add it now. Turn the omelet over with a plate and allow to cook on the other side.
Serve on a plate, ideally eat warm.
