BULGUR WHEAT SOUP WITH BEEF SAUSAGES
This is a wonderful soup from my childhood, ideal for cold winter nights.
2 beef sausages
1 large ripe tomato
1 dried onion
50ml olive oil
100g bulgur wheat
Salt & pepper
1l of water
Cut the sausage into pieces. In a saucepan, allow the olive oil to warm and add the sausage until both sides are colored.
Remove the sausage and in the same oil add the onion and leek and allow to fry. Add the chopped vegetables and then the tomatoes.
When boiling, add water to the pan and cook over medium heat for 20 minutes. Put in the sausage pieces and boil for another 2 minutes.
