Ingredients:

4kg. pork thigh
10 potatoes
1 clove of garlic
2 tablespoons of sheep and goat butter
1 ripe tomato
150ml olive oil
300ml of water
½ teaspoon cumin
Oregano
Salt & pepper

Method:
Wash the meat and wipe with absorbent paper, make some slits, slice the garlic and place inside the slits. Add salt, pepper, cumin and oregano. Drizzle with a little olive oil and leave the meat for an hour.
Peel and wash the potatoes, leave them whole and salt and pepper them.
In a large baking pan, place the pork in the middle with the potatoes around it, slicing the tomatoes and placing them inside. Drizzle with olive oil and water. Put butter in different places.
Cover with foil and bake for 2.5 - 3 hours at 200 degrees.
When cooked, take the food out of the baking pan and leave to sit for a moment.
