In archaeological museums, especially in Crete, you can admire the wealth of Minoan cooking utensils.Gas and electricity have promoted new technologies and changed the scene in modern cooking.Many changes may have been made but earthenware cooking vessels have not lost their value. Contemporary pottery artists from the traditional pottery centers of Crete and from other areas involved in ceramic art make amazingly elaborate ceramics for traditional cooking. More and more people are re-making a wood-fired oven in their home or cottage to enjoy a well-cooked and tasty meal with their family and guests.Baking with a clay pot or casserole does not require any special techniques. With only a couple of attempts you will understand how they work. Even dishes with legumes can become more flavorsome cooked in them.Good, fresh ingredients along with the cook's craftsmanship will give a good result. But beyond the recipe, even the quality of the wood used to give heat is important.Today we chose a traditional recipe with beef and pasta baked in clay. You can choose to bake it, either in a wood-fired oven, if you have it of course, or in the electric cooker in your kitchen as usual and make sure to serve it steaming for better enjoyment.

Ingredients:
1kg. beef (with bone)
300g of wholegrain pasta pellets (or any small pieces of pasta)
1 large onion
2 large ripe tomatoes
1 tablespoon grape syrup
200ml red wine
100ml olive oil
100g cream cheese scrambled or kefalotyri or gruyere
1 cinnamon stick
4-5 laurel leaves
Salt & pepper

Method:
My beloved butcher, Manolis always supplies me with the best meat, is the man who teaches me what meat and which piece is best for each recipe. So when I told him I wanted to make beef and pasta he advised me to get veal. "It's a bit older, a little tougher, but it will taste better and the jelly will have more pasta in it." I took his advice and of course he was absolutely right, the result was great.
Wash the meat and let it strain, dry it with absorbent paper. In a saucepan add the olive oil and fry the meat very well on both sides.
Chop the onion and allow to fry, quench with the wine and keep cooking to allow to evaporate. Pour two cups of warm water over a pan and allow to simmer for an hour at medium temperature.
When the time is up, transfer the food to a casserole (preferably a clay one. If you do not have a casserole with a lid, cover with greaseproof paper and foil). Add the grated tomatoes, the grape syrup, the herbs and pepper. (You can start the whole process in the casserole but it will take more time, at least two hours.) Close the casserole and bake at 200 degrees on the bottom grill for 1.5 hours.
Open the casserole and add about 2.5 - 3 cups of hot water. (The correct ratio is 1 to 3) Taste if you need some salt and toss in the pasta, shake gently. Return to the oven without lid and bake for 15 minutes. Remove from the oven and add the cheese, cover with lid and allow the food to simmer for 10-15 minutes.
