Lentils are one of the most delicious and healthy dishes of Greek cuisine.

Ingredients:
300g of lentils
1 large dried onion
1 clove of garlic
1 carrot
2 ripe tomatoes (grated)
1 tablespoon tomato paste
3-4 laurel leaves
½ teaspoon cinnamon
¼ teaspoon cloves
3 tablespoons vinegar
200ml olive oil
Salt & pepper

Method:
Put the lentils in water in a saucepan and let them boil for 10 minutes, then strain.
Sauté the onion and garlic in 50ml olive oil (I mash the garlic to get the taste and smell but also so that it isn’t seen in the dish).
Add the lentils and then the carrot. Sauté for a few minutes and quench with vinegar. Add the grated tomatoes and tomato paste.
Add the spices and cover with warm water. Pour in the remaining olive oil and cover the pot. Simmer on medium heat for about 1 hour.
